Preheat a skillet over medium heat. Add ground beef. Cook and mash it for 3 minutes or until the fat is rendered and the meat is mostly cooked through.

Add in onion and garlic, season with salt and pepper to taste. Saute until onion is softened and beginning to caramelize, about 3 minutes.

Once onions are softened, turn the heat off but leave the pan on the burner. Add the corn and mix to combine. Once corn is heated through, transfer the mixture to a bowl or plate.

Reheat the skillet over medium-low heat. Place a tortilla in the pan, cover half with a layer of cheese, followed by a layer of the meat filling with a squeeze of lime and cilantro to taste, then a second layer of cheese. Fold the tortilla into a half-moon shape and cook for 2 minutes each side until tortilla is crisp and the cheese is melted.

Serve with a lime wedge and sauce of choice.
