Preheat oven to 425 degrees Fahrenheit.

Cut off the brown ends of the Brussels sprouts and pull off any yellow outer leaves. Then slice in half and place in a bowl.

Add in olive oil, salt and pepper, and toss to thoroughly coat

Place brussel sprouts flat side down on a greased sheet pan and bake for 25-35 minutes until crisp on the outside and tender on the inside. Optionally sprinkle with additional salt before serving.
Pairs well with whipped ricotta!
